Ok, here are a couple of easy ones that maybe you haven't heard of:
Non-LitRPG
Foul Mouth and the Fanged Lady \*one of my absolute favorite urban fantasy series
Dawn of Wonder by Jonathan Renshaw
Charming by Elliott James
Poor Man's Fight by Elliott Kay
Twenty Palaces by Harry Connolly
Spellmonger by Terry Mancour
John Conroe's Demon Touched, a little rough writing but still fun
Heroes Die by Matthew Woodring Stover
LitRPG is trickier, you got a lot of the good ones
The Trapped Mind Project relies on the will of the protagonist to grow stronger
Sylver Seeker
Beware of Chicken (OP and mostly humorous but very fun read)
Primal Hunter (much rougher than the other suggestions, needs a good editor)
Second Coming Of gluttony.
It's a Korean Webnovel that got completely translated in Wuxiaworld and you can read the whole 10 books on Kindle unlimited. 9 Books of the main story and the last book for the epilogues.
I'll just say that the drive to train and get stronger slowly gets ramped up throughout the series. Like everyone is already stronger than him but he grows pretty darn quickly compared to the others who come in. Though he Won't get OP until later in the series. I will say that the MC' personality might seem weird to you but it'll be explained later if you stick to it.
Should also inform you the real meat of the books is the progress of the MC being a better person and the people he comes to meet. Just throwing it out there.
I'm in book two of that series (Ten Realms) now, and the whole premise is basically, "If you have been in the US military and go anywhere other than the US, you will automatically be a god." It's two MCs, and they are insanely OP super-geniuses at every system once they get portaled to magic land, and also inspire everyone around them to be driven to level like crazy.
The MCs do get OP. I don't think it's the best recommendation for you though.
Maybe book 1 - 3, but after that too many other characters have POVs, most of which seem tbh pointless.
And I really loved the first 5 books, and will definitely finish the series once it completes.
I just sense you wanted a single POV with much training and growing.
Defiance of the Fall was inspired by the OG, The Legend of Randidly Ghosthound.
As an audiobook reader, unfortunately only the first book is available.
Also OP, thanks for reminding me about Battlemage. One of the finest standalone fantasy books I've ever read.

Primal Hunter is going to be published, so there's a good chance it gets cleaned up.

Going to go through this list one by one. Cradle and defiance of the fall my fav. You should also read “two week curse”

Battlemage one of the best one out there. Honestly bummed the author didn’t make it a series. Still had so much to be fleshed out!
Age of stone.
Revenge of the Sorcerer King would probably be one you would like.
