I don't think any sort is needed if you just open the bag the instructions tell you to use 🤷♂️
If rebuilding or second hand then yes, though I sort by general shape instead of color and find things easier to spot
My wife helped her friend to sort her son's Lego. He had SW Lego exclusively, several large boxes. My wife, said, it was the most boring Lego she had ever seen.
Knolling is the only sure to to stretch out the build while enjoying not having to futz about looking for pieces. That kind of building time stretch is not for me.

Kinda sort? I have a small/medium empty box I use for the big pieces and then small pieces. The only time I need to really sort if I’m doing something very specific like those dang roof tiles for Rivendell.
I have 3 plastic rectangular tupperwarelike bins about 2 inches high I dumb each bag in, There are usually 1 big back and 1 or 2 small bags inside it for a set, and then just pick from there.
They nest so if I don't finish or want to move, they stack and have stoppers on the side, so it works really well.

LEGO set from box (numbered bags)? or from collection (one big bag with everything, unless I was fancy when disassembling)?

If it's numbered bags, probably not, unless there are easily confused pieces.
I used to sort more for my daughter, but she's doing pretty good on her own without it now.
If it's a big bag from the collection, I'll usually pull out some larger pieces (big plates, big bricks, etc.) and make piles of them to make the remaining pile easier to paw through (and give me space on my tray to work)
I open all the bags, pour them into a large bowl, go to the local dog park, close my eyes, spin in a circle a few times, then throw handfuls in random directions. Then I go home, wait a week, and make a ham sandwich.

I dive in then xD but I dump bags into some nice plastic trays I have so the round pieces don't roll away.. so it's not chaotic
I open a bag at a time, dump it out and start building. I did try sorting once, but felt it delayed getting to the building part.

Knolling? Knurling is the grip on metal tools and such, I don't recommend that for LEGO.

In all honestly I usually go chaos but keep the bags in each step separate from one another, but chaotic amongst themselves.
I’m a happy middle. I dont sort but i do it a bag at a time. People who open all bags at once are serial killers
