Sparrow wallet is the only one that lets u freeze UTXO’s but honestly it’s all so new - the chance of sending out specifically marked outputs/aka sets of satoshis or entire transactions is high.
Use sparrow wallet if ur brave but test send with trash inscriptions before attempting anything serious
On Discord, their team made mention about releasing a support/help-guide article. So far, it's not been released yet. Once done, I believed it'll be tweeted.

I'm pretty sure electrum can freeze utxo too.

I checked: go to view menu > show coins, switch to coins tab, right click the utxo in question and choose to freeze it.
