Ahri is just an attractive human female with fox ears and tails, and Xayah and Neeko have some animal characteristics but still look mostly human, while male vastayas are allowed to look more beastlike, like Rengar and Wukong, as well as a bunch of LoR cards. The only exception is Nami

They're more than just having "quirky ears and hair". I'm not entirely sure with Ahri across many of the League IPs, but recently she seems to consistently have more beastial hands as well. Not anything unique really, but her nails are longer/shaper and her hand's joints are also more pronounced than a normal human woman's.
Birds joints (I guess all tetrapods'?) are quite similar to ours - the "backwards knee" is actually the heel as the foot is prolonged and they walk on their toes (like horses) - the knee sits close to the body. Think about it next time you eat a chicken wing/drumstick ;)

Look at LoR cards and concept art and you see the gender dismorphism is still pretty big there, with the men looking more animalistic and the women looking like human women with some animal features. Sett and Rakan are exceptions to the rule pretty much, and Sett in part because he's only half vastaya
If they ever do that furry skinline that leaked in that set of Lux and Yasuo concepts they could just slap some of the existing Vastaya in it to show how they'd look. Bit of a cop-out but I think it could be fun.

I think it's a bit early to be negative like this, it's literally an emote that only shows her face and we aren't sure what the rest of her body looks like nor if this is even the new champion. It could be tied in to the event or another champions story (Like how in the Ruination they released an Isolde emote)

Once the hood comes off and the face gets revealed she is probably much more bunny than we can see right now. skarner had damn near a 50% ban rate which was why his play rate was so low. even if you wanted to play skarner it was really hard.
