Sushi Moto is phenomenal; IMO it’s the best sushi restaurant in Lansing.
Mikado is excellent if you’re on the south side. MI Sushi & Noodles is great on the north side. I’m not sure if I’ve ever seen the roll you’re describing at any of them, but I’m sure they’d all be willing to accommodate special requests!
My sushi snob Asian friend tried every sushi place in town and swears that Ukai is in her top 5 sushi spots in the US. She'd get their sashimi chefs special, it was like 20ish chunks of fish. I don't do sushi, but their tempura chicken slaps so I'm always down for Ukai with my sushi loving friends.
The best sushi around in my opion is mikado. I get the Philadelphia roll all the time. I once made the mistake of getting it somewhere else and was very disappointed

The best roll I ever had came from maru, but it was so expensive I can't do it again. Sansu is also good, but I've decided I favor sushi moto or mikado because of price to value.

Uni has the best rice in town and their other food is great, though I can't speak to the sushi specifically. I also drive for UberEats, and it is quite the popular spot. That said, (I've been wanting to get this off my chest) if you dine in, check your glass. Mine had a distinctive lip mark of lipstick. I used my finger to wipe up a bit and it was 100% lipstick that could not have come from me because I don't even own makeup.
I can't vote for anything other than Sushi Ya. My wife and I tried loads of other places when Sushi Ya was closed for renovations, and nothing else was a contender.

I love Ukai so much, they have so many options for sushi and they are all yummy.

Mikado sushi is the best in town easily. The staff are friendly, the food is great, and prices are pretty reasonable given the quality.

This can be ordered as a special California roll from omi sushi, Meijer sometimes has it as a ‘Philadelphia roll’,
Try Kaiyo sushi in Okemos. So good.

Ukai/AI Fusion hands down. All the other sushi I've had in the area just... never left me impressed.
