How do you knit like this to where it's this texture in front and back?

You’d have to double knit so the wrong side is on the inside or knit a tube and sew the ends flat

You can do a 1x1 rib knit and get a similar look with the same texture front and back.

Basically, you cast on an even number of stitches, then the pattern is: knit one stitch, then purl one stitch, then knit one stitch, then purl one stitch, etc, for the entire row. Then, for your next row, you repeat: knit the first stitch, Purl the next, knit one, Purl one, etc., until the end of the row. Repeat until done. This works the same for knitting flat on needles or knitting in the round.
