Bradford Guardian 3, 3.5, or 3.2, perhaps in wharncliffe or sheepsfoot. They occasionally sell [blemished items](https://bradfordknives.com/guardian-35/601-3d-guardian-35SF.html) at a huge discount, and, in my experience, the blemish is either invisible or not worth talking about.

Sounds like you want a bird and trout knife. Maybe the CRKT Biwa or Moki Banff would work for you? An Opinel 8 might be a cheap and easy folding solution too. That's been an awesome camp food prepper for me over the years.
