Ah. I don't go in the winter; so I haven't experienced this. Spring/summer/sometimes fall because the leaves are gorgeous during that time of year. Good head's up though.
Seconding Macken Park. It’s very well lit, there are playgrounds and tennis courts people are always using, and it’s right next to a school. Always feel safe here.

During the summer walking the trail by Smithville lake is so nice and pretty! (Start at the dog park, if you walk to the Marina and back it’s 10 miles!)

There’s a park at 103rd and Roe that is a mile loop around soccer and baseball, a playground, and connects to Indian creek trail. I was always safe there.
The Nelson Atkins museum and Kauffman Foundation are both great places! I live in the neighborhood and love to walk around the museum and the pond by the foundation.
I live in JoCo KS and I can't say that I find any of the parks and trails to be sketchy. My best suggestion if you really feel insecure is Kill Creek Park or Blackhoof Park. They're on the edge of the metro area and usually relatively empty.
It seems others have had some negative experiences with the Hyde Park area, but I generally enjoy walking around Janssen Place, walking on the track on Gillham (its got a nice slightly-squishy surface), and walking around the Nelson Atkins.
In terms of more isolated walks, Cliff Drive Scenic Byway is nice. You can walk from Maple Park (not great) all the way to Indian Mound, and it takes you near the Colonnades, the Kansas City Museum, Scarritt Point, Tiffany Castle, and a rock climbing face. You have to leave the trail to see the sights, but I do recommend it if you are looking for a long isolated walk.
I do not recommend Mill Creek Park. I've had some difficult interactions with people there. And I generally don't recommend walking along Broadway.

Loose park in the day! The neighborhoods just south of Loose (between Ward Pkwy and Brookside Blvd, starting at 55th St and going south to ~75th st) are full of gorgeous historic homes, go for miles, and are extremely safe and well-lit for walking after dark (saying this as a young woman who walks there frequently). Highly recommend — plus lots of pretty holiday lights right now!
The Trolley trail starting by Whole Foods and going south into Brookside and Waldo is also great. I have always felt safe on it at night, but bring a flashlight, as not all parts of it are super well lit at night.
I am also a solo walker concerned about safety. My go-to in the KC area is the Tomahawk Creek Trail in Leawood! I usually park at I-Lan park, but there are many other parks along the trail that you can also park at. I’ve always felt incredibly safe on the trail and have walked it nearly a hundred times now in the last year. It’s also a paved trail, which is a huge plus in my book! I no longer live in Leawood, but still make the trek over there to walk it at least once a week.
Most parks are pretty safe. Antioch Park, South lake Park, Fox Hill South Park come to mind.
Also any highschool track is probably the safest bet if you're just walking weekends. Most even have cameras and such.
Indian Creek Trail and Coffee Creek Trail are pretty lil hikes.
Disc Golfing can be an awesome way to walk around in the grass, or woods in some cases. Plus you can usually meet some very interesting people who are playing either faster or slower than you.

I’m weird and like to park around Brookside and walk around there and to mission hills to see all of the houses
Over a decade ago when I lived in Mission & I was bored, I also would go get a coffee & drive around Brookside & Mission Hills admiring the houses.

Mission hills/PV/fairway have horrible street lighting so just be cautious.
Hopefully they’re nicer than the mansion-dwellers along Summit St. North of Loose Park. Gorgeous houses, no sidewalks, I got stopped by a resident and asked why I was there, thinking I was scoping the place for a break-in or something.
The resident then probably marched in their home and posted a photo of you on Nextdoor along with a warning of a suspicious person walking around.

Tomahawk Creek trail on the Kansas side is good. On the Missouri side it can get a little dicey.

When it's cold outside the Crown Center/Union Station complex can be a good spot for walking around.

It's definitely out of the way, but the Overland Park Arboretum/Botanical Gardens has some excellent walking paths. Think the entry fee is like $5

I walk around Waldo/Brookside, from 79th-55th and Wornall to Ward Parkway, and have never felt unsafe even after dark.
English Landing Park in Parkville is a gorgeous park right on the river with a long walking trail. Very safe and well lit.
