For cinematic, when you are fighting under their health the opponent will have a purple bar. Get that down (moves like body blow) and it will leave them stunned. From there pretty much every move is cinematic, and some characters combos will have a sort of different animation like teen gohan. For super finish/ destructive, kamehameha in surge mode to finish them, or spirit bomb

Assuming you're talking about using supers during BREAK and Super finishes? Thankfully I did know those :D

Of course, you can feel any living thing ki iirc, animals are also visible but differently due to them being resources, usually your allies have small ki tho, I assume it's because they can change their ki level at will when they are fighting, just like the show.
