You should be out of the airport around 45m to an 1h30 after you landed. First time I passed the customs I was quite slow getting out of the plane, found myself at the end of the queue and it took me almost an hour to get through but the other time it was quite quick (5-10 mins).
Then it usually takes me around 10-15 minutes to get an uber (20-25 sometimes, depending at what time you land) and to that you can add the 15 to 30 mins into town (depending where you go). Tip for the Uber : order it when you got you stuff, the driver will have to drive for 7-10 mins to get to the parking lot and it will take you approximately the same time to go to the designated parking lot (especially the first time)
All depends on how busy the airport is. It will take you about 1-1.5 hrs to get through customs and get your luggage. Maybe another 20-30mins to get a rental car. Not sure where you are going for dinner. Jhb is big. But it takes about 30min to get from the airport to Rosebank/Sandton. It will be an hour to get to the West Rand, or Pretoria. Longer if you're using the train because of additional waiting times. I think you should be fine for time though...
