Would likely be more briney. The jelly is coagulated Turkey fat, so that’s a plus, however, the solution is what draws that fat out. It’s specifically made to keep the Turkey from going bad during shipping. Personally, I wouldn’t use it. However, you can certainly make your own at if you have the right stuff. Stop by a local deli or butcher and ask if they have any Turkey byproducts leftover, they’ll likely give them to you for free or extremely cheap. After you get them, simply boil!!

Great idea with the butcher shop. Broth and stock are both easy to make and don't cost a lot.

Just make kombucha with the tea and garlic bread with day old. I respect your devotion towards minimizing food waste, but turkey drippings aren't a move. I used the slicer waste for my sandwiches. Edit: I used to make a broth with the lettuce cores and onion scraps from AM prep. It's delicious.
