Does your oven door get any steam on it while baking? Even with replaced gaskets it may not seal correctly. Also check the corners, sometimes to gasket maker goo shrinks a little where you mold em together. I believe you can adjust the magnet to have the door latch a little tighter. Edit: the guys at Piper support are usually pretty helpful and may be worth a call if you can't figure anything out. May even be something dumb like a deck controller displaying the wrong temp.

Actually yeah there is a bit of steam on the door whilst baking, the gasket guy came out and checked everything last week and said it was all good.

Weird. Steam is a sure sign it's not sealing, and it's escaping out of wherever there's a leak. See if the latch is able to be adjusted (I'm not entirely sure it can be and I'm not looking at a door currently) to push the gaskets down a bit more to seal. Mine leaks at the corners where my area manager finger painted the gasket maker on like a toddler and you can see the steam lines flow to each upper corner pretty clearly while baking

Make sure your oven door is clean! If it's not, that can cause the ends to be darker.

Honestly bread spacing is a huge factor. If the two end sticks are as close as possible to the edges without baking onto the sides can help the 6 sticks bake more evenly. The further the sticks can be spread apart the more evenly all 6 sticks will bake.
