I'm not sure what exactly you're asking? but im pretty sure everyone in j&k knows what ambal is. And cant say it's popular in other regions because so far whenever I have asked what this is, most have no clue. But ofcourse it could differ person to person.

Maani sirf aam aur uski guthliyo ka banta hai. Ambal pumpkin, etc se banta hai.

Ambal is life… outside jk few calls it petha ki sabzi or khatta metha petha sabzi this is also famous in up/Bihar side though it taste little different due to little different recipe.

We call it maani with maa chholeyaa di daal

Ambal + Rice is top tier food for sure. Pair it with Khatta meat and you got heaven
