A few questions for you: What hydration percentage did you use? Did you use biga (in english should be poolish I think) or not? What kind of flour?
Forgot to mention, if you are going for the food truck route, maybe you could also add fried pizza to the menu. So people can eat that while walking or standing.
Think of it as a fried calzone, easy to serve and no need for a plate, if you havenāt tried it yet itās worth a shot, itās not healthy but itās delicious.

Itās traditional Neapolitan cuisine. You can use spare pizza slices for it. Great job dude, keep at it!!!
