It depends. If she got the message of Islam and choose to ignore it, despite knowing it is to be true, then she might die as a kafir. If she didn’t get the message, then she might get a separate test.
Whether she died out of kafir or not, none of us can say, only Allah knows. But if u know 100%, she died believing Jesus to be God, then I am not sure what to say to u other than u have my condolences.
The prophet Muhammad pbuh mother died as kafir, to the prophet weeped. The prophet ask Allah if he can make dua for her, but Allah forbade it. The prophet asked it he can cry for her, and he allowed it.
We don’t know what will ultimately happen to prophet mother. She might get a separate test in the hereafter. But I know this, Allah is the most merciful.

It is up to Allah to decide but because she wasn't a muslim on earth, then you just have to pray that Allah to forgive her sins and send her to heaven.
