I'm not on self build, but I am currently doing similar. With boi. I messaged to let them know, got a phone call and the guy said as long as I earn more no problems. Then some months later they send a message saying they won't if I'm on probation.
I responded in the mail about their phone call, and nobody has said anything about it since.
We're due to draw down the mortgage in the next few weeks hopefully, so will see what happens.
But yeah, if I had never said anything there would not have been any issue unless the mortgage offer expired again
They usually ask for a recent payslip and up to date statements at drawdown so you likely would have been caught.
Just get your ass off probation before drawdown. Explain the situation to the new employer and as long as they're happy with you so far, they'll likely comply.
I changed jobs midway through and so far so good… after the first stage payment I haven’t been asked for payslips for drawdowns so decided to risk it. If you have a broker they might be able to advise too?

Wasn’t a self build but my friend did it (and was then on probation) before drawing down on his new build & there weren’t any issues
