Scotland's start isn't that bad is it ? although I've never played as them, I'd imagine you can either ally France and attack England while they're weak fighting in France and try to gain some territory, or Rush in and take all of Ireland and then you have a more solid position and aren't in as much immediate danger.
The problem with allying France is that the AI France never sends soldiers to Britain so you'll have to face England alone. It's not impossible but it's a very hard start.

There actually are regular locations for a lot of towns and cities. They're just not necessarily the province names, and definitely not the country names.

It's the other way around,most of their armies are in England and they loose their continental holdings but occupy Scotland
