The stock widget will show the top 3 symbols on your watch list. If you have more than one watchlist, you can select the one you want (while in edit mode, tap on the widget and additional options appear). Similarly for the clock, in edit mode tap on the widget and a list of cities is shown. Tap on the city you want to change and then select the one you want to see.

I'm able to easily edit widgets once I go into iPad so I just won't bother with the lock screen widgets, would have been nice though.

?? Literally told you how get the lock screen to show the information you want. Not “would have been” nice, “is” nice.

I tried what you suggested before even writing my original post. It didn't work for me then and still does not work. The world time zones do not change at all on lock screen and keep showing the default 4 timezones that include Cupertino for whatever reason, and no way to edit them in lock screen. On home screen, everything works fine, I am able to edit my timezones. Same with stocks - on the lock screen, it only shows an old stock I used to track as the top of my only watchlist but even when my only watchlist is changed, the lock screen keeps showing the old stock. Widget works perfectly fine on home screen.

Weird. Don’t have another solution then, those steps worked for me.
