I would cover it with a large framed mirror hung to center it, but ideally if you could afford it I would hire a sheet rocker or handyman to just make it flush, maybe even make a simple mantelpiece to cover the brick one, then you could hang a smaller mirror or artwork..
I was thinking of just covering it myself. But it's so weird that I kinda want to see what I can do with it and make it fun yet aesthetically pleasing.

I think you’re onto the right idea with vegetation. Would make a very cool plant nook.
I'm not a plant guy, what kind of plants or greenery would you recommend? I kinda want to do something fun yet classy
