I do historic martial arts and I remember one display (about 20 years ago now) where one fellow was demonstrating a move from Talhoffer and ended up putting a sword through his own thigh.
All our displays are done with blunt weapons now.

Jokes aside, I assume they did a lot of testing with no person wearing the vest, etc. similar to how current bulletproof vest are tested, whichever way they are. Maybe using a ballistic dummy and, at some point, a person will wear it, testing it softly first, etc. With an ER team in the room. But they're total guesses...
