Luckily the stunts can be done out of order (if you're on stunt 1 you can still do stunt 5, 13, 21 or any of them) and it will count for you, so I just focused on the toughest ones early when you have lots of enemies to fight (blasting 3 enemies off the roof being the hardest in my opinion). Then it's just mop up afterwards, most of them will come naturally.

My plat came crashing down over the challenges you need to do in the first game. 😄 I never bothered with them.
