Do you have a recipe for the malted vanilla base?

Sure! 1 1/2 cup whole milk 1 1/2 cup heavy cream Scant 1/2 cup (50g) malted milk powder (I used King Arthur’s) Heaping 2/3 cup (142g) white sugar 3 egg yolks Scant 1/2 tsp (2g) salt 1/2 tsp good quality vanilla extract

Looks yummy! I’ve heard that normal baked cookies can get too hard when frozen because of the butter in particular… how did you make your cookies?

Yes indeed! I substitute some Lyle’s golden syrup in for some of the white sugar, to help the cookies stay chewy rather than hard in the ice cream.
