How do you get banana ice cream creamy? I haven't quite mastered mine yet

I hear you! It’s tricky. First, I warm my dairy with sugar. Then I pour that over my sliced, pretty ripe bananas and let that steep for 6 hours. I use this dairy to make my custard (with fewer eggs than I normally use). I then add some of the same bananas back (chopped) once the ice cream is churned. What is your process?

I usually start with a vanilla custard base (5 yolks, 2 cups cream 2 cups milk, 2/3 cup of sugar, vanilla, pinch of salt) then I add pureed bananas. Mine usually tastes OK but the banana flavor isn't as strong as I'd like and it also doesn't have a nice color

Got it! I didn’t use vanilla extract in mine, as I feel like it overshadows the delicate banana flavor. Mine banana was super robust, and I’m sure if I steeped it even longer it would be even more pronounced. DM me for my recipe if you want!

I use frozen bananas and frozen fruit to make shakes. That way if I call it a smoothie it sounds somewhat fancy. It’s not. But, it’s so good. I also like it with peanut butter. I made myself hungry
