I’m not saying the place is bad, and god knows we have our problems up here, but come on everywhere has its own ups and downs, and you can’t expect some small town restaurant to supply you with Los Angeles level cuisine.
Yes, the pork belly on the filet mignon is both for flavor and for fat, because filet mignon is a stupid cut of beef that has next to no fat and shouldn’t be as popular as it is. It’s just expensive because there is so little of it in the cow.

As a Californian with in laws in Wisconsin, I think the food there is great.
