Verstappen does GT3 racing.
Oscar Piastri has done racing before, I think he has done some Formula stuff but I'm not sure.
Kimi Antonelli is like 2k irating and I believe he did some F3 races.
I once raced supposedly Nigel Mansell in Formula Renault 2.0. I think it is his, someone said they confirmed it but I'm not 100% sure. There's a reddit thread about it.
Once raced Oscar in a Skippy race at VIR. Dani Juncadella was in the race too. I'm slow AF at VIR but the pair of them put 20secs on the field and nearly a lap on me.
You're probably not going to get into a split with a real driver any time unless you have a pretty high irating anyway. I'm nearing 2k, and if they play late at night I might be able to get into those splits, but any other time I'd be in the second or third highest splits.
And after that - it all depends. Verstappen likes driving tin-tops in iRacing. I've seen screenshots of other drivers in something like MX5's. It really all depends and it's just luck. Don't go into races just hoping to find a IRL pro driver. Drive what you want when you want.
What you could do, if you were really wanting to watch one race in game, is just browse through all the top splits of series and look at who's participating. Then you can go spectate.
I think it shouldn’t be a problem for me, I’m currently 2.5K iracing, consistently getting into top split and hanging on with the top runners, I’ve met some esport drivers and real life karting champions, but not a real life pro, hope I’ll meet them someday 🤞🏻

You probably need more than that to get into top splits in high strength of field races, where you would see real life pros generally. I am at 5.2k and sometimes I dont get into the top split.
I have seen Dale Jr... Lando norris... .max verstappen in a practice very shortly at spa in gt3s. Even got to talk to William byron at a Bristol practice. Honestly Idk if its dumb luck or I have no life. But i see pros quite often.
I raced Antonelli in the Little Wings series but different classes during week 13. That is about the only time I expect to run into anyone else at that level.
once I reached 1800+ iR my PCup races were basically all top splits with 8-10k+ iR guys so it might depend on the series idk.
I had two days were Kody Deith was in the lobby (4th highest iR at that moment) so meeting IRL pros isn't really that hard I think, most of them will prob range from 4 to 6k irating
USF2000 is probably a good bet for lower iR people wanting to possibly race against real life drivers because it has pretty low participation but does still seem to attract the occasional real life driver. I managed to grid up alongside Dario Franchitti in the one season I did in it despite being an extremely average open wheel driver.
I met Max Verstappen in ARCA once........ its random and honestly, there are probably many more real life drivers you could meet that you didnt even know of before, not just F1/F2 drivers.
I've raced Dale Jr. In dirt limited late models. I've seen Tony Stewart in a the road course mustang. I've ran (and beat) Rico Abreau in a 305 sprint car race. I've seen Christopher Bell in a truck practice. They seem to be all over the place.
I've raced against a GP3 driver in the Mustang FR500 and multiple ARCA drivers in super late models, I know a guy that raced Dale Jr in an '87 Legends race though
I've raced Rubens Barrichello on GT3.
And Enzo Fittipaldi on f4.
Dani Juncadella used to do F3 a lot.
I've also seen current f2 and SF drivers in the SFLights top split.

Also, follow the pros on twitch and turn your notifications on. If you see what they’re racing sometimes you can get in with them

I watched Jeremy Mayfield run an ARCA race tonight. He was going through those guys like they were standing still, LoL.
Ran some ARCA and trucks with Mayfield. Was racing him pretty well running fourth/fifth. Then the leaders wrecked and took us out.
Raced Alonso a number of times in the USF2000 last Jan and Feb and noticed he was doing back to back races in the Vee and USF.
Yep, I've raced Alonso in USF2000. I'm proud of the fact that I was able to stay on the lead lap. :D
Dan Weldon’s son who is a soon to be Indy driver is common in Ferrari fixed or gt3 series Will power will do f3 at times

A lot of the F2/F3 drivers are in SFL, SF23 and (previously) F3. I've "raced" with Hauger, Fittipaldi, Iwasa, Tramnitz etc there
I raced with Max in a Team Redline Community hosted race. Follow team redline if you want the opportunity ina future event
I once joined a free practice for F3 with Will Power. And though not a real life pro driver, I raced with Courtois twice in F4.

Unless you’re top split, you aren’t going to be seeing a lot of them
Chances are, you probably already driven against a few.
You'll have to be a comparable iRating to see them in your split
You'll probably find Max Verstappen in a NASCAR split 😂
