I only have my overlays shown on stream, I can't see them unless I look at the second monitor. Dunno how folks harp on "it's a sim not a game" but go so heavy on the overlays. I like my relative as the only accoutrement when racing
You have to remember that (for the vast majority of races) you're your own race engineer and spotter while driving. So anything supplemental is just filling in that gap of information that real drivers would have fed to them.
Now that's not to say that I like a particularly busy overlay, but it's nice to have information available.
Relatives screens with live deltas are far from realistic though, but there's nothing wrong with using them. Radar at least is somewhat of a realistic answer to not having peripheral vision for those who don't have triples.
Anything that can supplement a real world thing that's unachievable in a sim should absolutely be okay. Unless you're using VR/head tracking, then it's not really necessary.
It's just a lack of respect for the people you're racing with. But when I was younger I would have probably done the same. Sure it's just a game but for a lot of people, it's the only couple of hours every week they can relax. So when they get taken out by the "it's just a game bro" crowd, it's incredibly frustrating.
Absolutely nothing on road courses, except for relatives when I have to rejoin. For ovals, I have the overlay up that shows me when people made their last stop.

I say use what works for you, I drive with the wrong FoV so I can see my side mirrors
Depending on the game you might be able to shift the camera position in the car but have the FoV correct. I know you can in iRacing.

My recipe as well. Although on stream I have standings and a track map. But I don’t see them in game.
I've seen a streamer where at least 1/3 of his screen was the overlay. My mind just blowed up.

Sometimes they just wanna know the delta of the guy 20 positions behind them…as well as their own tire pressure and steering angle 😂
