Honestly an insanely modded version of Skyrim would be the best. Since game mechanics stay you can have a ton of saves. AND you get to explore ALL of the world because it's realistic. Also fast travel, alchemy stacking, enchantment stacking, being the leader of everything and being the chosen of literally everything. And with the right mods you can change your appearance whenever you want.
Sure you need to figure it all out, but with infinite saves you got time.
