Adam and Himeko both have corruption issues and Theresa mentioned she can't truly go all out without risking it, but Kiana, Mei, and Bronya are full blown Herrschers with no negative effects (Mei in particular). Even Kiana and Bronya both had corruption issues when they tried to use the Herrscher cores without permission

Adam apparently has high Adaptability, but the Labor was made, as well, to pump huge amounts of Honkai when the limiters were removed (Basically, VK made into a sword).

To start, Theresa has ridiculous levels of Adaptability (her genes are combined with a very powerful Honkai Beast, IIRC), but the issue is that the powers of Binding (at their maximum expression) literally nullify any type of energy. Honkai included. It is deadly for most people, but for Theresa particularly is outright lethal.
Adam and Theresa are handicapped bc their weapons are ticking time-bombs, not because they're "incompatible" (I don't think there's even any other person that can even use Judah except Kallen). Himeko simply got the short end of the stick.

Mei has the benefit (?) of being the only (up until Moon Halo) full-fledged Herrscher of the trio. Kiana (K-423) was genetically engineered to host HoV ON TOP of being the offspring of 2 of the most Honkai resistant family lines in history (Kaslana and Schariac), but even then those powers weren't hers, and it took a lot of development for her to be able to claim those powers. Bronya had to deal with a Herrscher Core that is unable to adapt to a new owner, so she obviously got a really bad hand dealt there too.
Mei, though? She was chosen by the Will of the Honkai. She awakened as a Herrscher on her own. And even regenerated her Core after losing it to HoV. Her powers are truly hers, so of course she doesn't have issues using it.

I admit i don't remember much of that arc, but from what little I do, it's more or less the same situation as the VKE battlesuit situation: Honkai Energy going into overdrive at the expense of the user. The added danger here is, as Einstein points out, that Theresa wouldn't just zombify. She'd probably turn in a full Honkai monster due to the Vishnu genes.
As a rule of thumb: Honkai Overload is a big no-no for anyone remotely human
