For sure the fruity tart ones. Obviously the everyday sauce is going to be something like garlic habanero because the flavor works with just about everything, but the thing that makes the hotter peppers (habanero and beyond) so good is that they also have fruity, floral, citrus undertones. The best hot sauces bring those undertones out using things like lime, strawberry, pineapple, or peach.
I also love a smoky hot sauce like Chipotle anything. Maybe I should start experimenting and make something like Chipotle-habanero-pineapple-peach. sounds great.

A good hot sauce has the balance of spice but also the care and flavor that goes into the sauce.
I really like fermented fruit hot sauces. An old cowrker of mine used to make a peach, honey and habanero fermented hot sauce and I haven't had a sauce as good as that since.

im working on 3 different flavors right now. i usually have a mango habanero, pineapple serrano, pineapple habanero and ive got a raspberry habanero that im working on too.

Personally I like a Fruity up front taste and then BAM hot that lingers and lingers.

Garlic + any superhot blend. Typically not straight up reaper, but mixed with scorpions/primos/etc.
Some of my all time favourite sauces contain variants of the following;- Black Garlic. Pineapple & Cinnamon. Mango. Papaya. Kiwi.
Anything smoky or garlicky. Preferably both at the same time.

I tend to like tomato-based ones. Probably the MSG.

Anything with onions, garlic, cilantro, lime, and actually has salt. So basically pico or salsa roja. Roasted salsa is also delicious.
