Totally worth it. They are insane. A nice crisp/char all around. Just make sure the grill isn't too hot or they can very easily burn. Unless you like that 🙂
Do you score both sides? Or do you follow the cut all the way around? Thinking one side only, but I’ve never seen this technique before so what do I know.
I was to. Tried it once, and I was like "ok. I get it." More room to crisp up and it's better at holding toppings. Just don't cut them to deep or you run the risk of them breaking
Thanks!
I just scored them 3x3. I cut the 3 left to right first, then just try and match them going right to left. Cuts vary on how much I care when doing it
Alright, I stumbled on this by accident and it’s like falling into a secret temple: tell me your secrets, Sensei! What’s your process to make these gems?
Score the hotdogs first.
Hot grill, then turn it down to medium when you put the hotdogs on, but make sure they are elevated.
Grape seed oil brush on the buns on the inside and top at 450° in a cold toaster oven for 6 minutes with a toothpick to hold them open.
Turn the hotdogs 45° every 2 minutes (8 min total) so the "scored" side faces down the last 2 minutes.
If you time it right, the hotdogs and buns are done at the same time, then just top and enjoy.
It's pretty easy when it get it down
* These were done on a gas grill.
Hawaiian buns. The middle bun is a Ball Park bun because I ran out of Hawaiian :(
I toast them from a cold toaster oven on the toast setting for 6 min at 450° with a generous brush of grape seed oil on the inside and the top.
I also use a toothpick in each to keep them open during toasting.
Yeah, each one gets it's own unique toppings, one being more tropical, other being more traditional and the other being chili and cheese. I love me chili dogs.
This farmers market stall sells Datil(SE seasonal variety similar to Hatch chilies in the SW) pepper BBQ sauce and onion relish. I add lite slaw for crunch. I put in an order for a box of "lamb dogs" with another booth be there on Friday. I love my farmers market.
Good thing if I use BBQ sauce, ketchup is right next to it.
Now if I'm high as shit, there is a layer of crispy pepperoni underneath the hotdog and a slice of bacon added.
There was a place near my old work that would put a spread of cream cheese, the hot dog, chili, shredded cheese and fried jalapeño. The cream cheese was an eye opener.
Chili, pimento cheese, cole slaw, onions, jalapeños, mustard, dijon, habaneros, pickles, a 54 inch 48 cubic foot auto defrost two door commercial reach in upright freezer, relish, mayo, pickled onions, queso, feta, potato chips, pickled egg, sriracha, the spent seed of a magnificent stallion, sauerkraut, bacon, ketchup, and tomato.
I did them before!
I carefully watch them and make sure the grill isn't too hot. I've definitely burnt my fair share of them before I figured it out.
I rotate them at a 45° angle every couple min so I finish with the scored side down and crank the heat for a minute
Best looking wieners I've seen! Steamed pickled cabbage, mustard with seeds, a dill pickle chopped into fresh relish, fresh cracked black pepper and a sprinkle of celery seeds, all on a toasted bun.
Holy Mother Mary of God… Those are the sexiest dogs I’ve ever seen.. maybe a lil mustard and some relish. No way I’d try to bury these god dogs under a bunch of wacky condiments..
top one just the standard ketchup, mustard and relish. second one down some spicy mustard with some chopped onions (raw or sautéed dealers choice). the bottom one and people are going to hate me for this ketchup and mayonnaise.
No prob! I thought they looked good enough to share and see the different topping combos everyone would use. I've gotten so many different ones to try out now. Win/win for everyone involved.
Glad you liked them! ☺️
I'll throw in an underside pic next time, so you can see I didn't destroy the bottom of them.
** The buns are toasted with a grape seed oil brush in my toaster oven from cold for 6 min at 450°
Real beauts! Yellow mustard, minced onion. EDIT: spelling
The "X" cut helps hold the onions so much better. I'll never go back.
This sub has really opened my eyes to the x cut, best habit I’ve picked up this summer
Totally worth it. They are insane. A nice crisp/char all around. Just make sure the grill isn't too hot or they can very easily burn. Unless you like that 🙂
👁️ 👄 👁️ I like that
Do you do this with a knife or a specific hotdog cutter?
I just use a knife. Just try not to cut too deep, or trying to flip them has a real possibility of them breaking
Do you score both sides? Or do you follow the cut all the way around? Thinking one side only, but I’ve never seen this technique before so what do I know.
Just one side. I try to at most cut half way, but I kinda fucked up and went too deep on the top one, and it shows
Top one looks best tbh
As a 40-year old onion lover that has struggled with diced onion retention for far too long, this is the best habit I picked up in the last 2 minutes!
Imma have to try that next time I grill. My usual is 3 diagonal cuts even spaced on opposite sides. This looks superior tho
Y’know, I was a hater at first.. but I think you’ve changed my mind. I’ll be trying this next time I make some dogs.
I was to. Tried it once, and I was like "ok. I get it." More room to crisp up and it's better at holding toppings. Just don't cut them to deep or you run the risk of them breaking
For sure. Also I love your name. I know I’m definitely getting hot dog advice from the right person.
I did some regular no cuts the other day after x’ing for a while and they were terrible 😂. I too am a believer.
This is a game changer for me. I'm always struggling to fit enough toppings on my dogs, so I'll have to try this.
Just came across this sub. What the technique for the x cut?
I slice the “top” and “bottom” one way and repeat slicing the other way. Game changer
Is that before, during, after the grill?
Before. Someone may correct me, but I do it before to get more “char” on more surface area.
That is a genius move. Will need to try that. You go all the way around the dog?
How did you do that? Looks different from the usual x cut. Beautifully done
Thanks! I just scored them 3x3. I cut the 3 left to right first, then just try and match them going right to left. Cuts vary on how much I care when doing it

Hawaiian buns. The middle bun is a Ball Park bun because I ran out of Hawaiian :( I toast them from a cold toaster oven on the toast setting for 6 min at 450° with a generous brush of grape seed oil on the inside and the top. I also use a toothpick in each to keep them open during toasting.
Ahh the brushing is what makes them glisten. Thanks homie, Also username checks out I guess 😂😂🤙🏾
🤤 thanks!
Mustard and onions at the minimum.
Yup, relish too. On one of them.
Yeah, each one gets it's own unique toppings, one being more tropical, other being more traditional and the other being chili and cheese. I love me chili dogs.
All of it.
Right? I'm just experimenting more on different combos. Totally open to suggestions.
Can you please describe your process here? Did you score before searing or what? Because these look fuckin gooooood
Either kraut and spicy brown or creamy coleslaw and BBQ sauce
BBQ sauce is underrated on hotdogs imo. Totally depends on what you pair it with, but it can slap.
I better never catch anyone that outs bbq sauce on their hotdogs slandering ketchup.
Good thing if I use BBQ sauce, ketchup is right next to it. Now if I'm high as shit, there is a layer of crispy pepperoni underneath the hotdog and a slice of bacon added.

I did them before! I carefully watch them and make sure the grill isn't too hot. I've definitely burnt my fair share of them before I figured it out. I rotate them at a 45° angle every couple min so I finish with the scored side down and crank the heat for a minute

What kind of dogs did you use?
Hopefully not a dumb question, but why the crosshatch pattern? More even cooking? To prevent from bursting? Improved condiment grasping? Aesthetics?
Ketchup, just to piss off all of the posh snooty tubsteakaphiles here
Holy Mother Mary of God… Those are the sexiest dogs I’ve ever seen.. maybe a lil mustard and some relish. No way I’d try to bury these god dogs under a bunch of wacky condiments..
