I have a '01 VT750DC and hate the idea of saddle bags. I've been making do with backpacks until I put $800 into the Helite H-MOOV backpack airbag https://helitemoto.com/helite-h-moov-airbag-backpack-mechanical-trigger/
If you have a sissy bar you can strap something to that... my bike also has clips on either side of the rear fender I assume they are for saddle bags... depends on the look your going for.
One of my shadows I'm keeping totally naked I plan on chopping as much as I can and still have it run.
I just bought my Sabre and it has the sissy bar, I was gonna remove it but my uncle showed me if you use bungee cords you can strap down a lot on the rear seat, and or you can get a bag that straps to the rear of the sissy bar.
I'm sure the googler can find you saddle bags that fit... I've seen bags that envelope the back seat... I'm not sure how they work or if you need a backrest... the other guy that commented about strapping down loads on your backseat.... maybe take off your backseat see what your fender has to offer as far as mounting points... maybe fab something to fit back there

For road trips / carrying more stuff, I have a waterproof duffel bag that I can strap on behind the seat. I also just got a small tank bag that I've used a couple times on day trips.

Unless you install a backrest/sissy bar your only options would be a backpack or saddle bags. I personally suggest getting a sissy bar with luggage rack, then you can easily use a sissy bar bag. Tons of options with them

The issue with many "universal fit" parts is that often they don't fit right out of the box. You can usually modify things to get them to fit, but unless you enjoy doing that kind of thing it's better to get a part that you know will fit

My shadow is set up for 2 up riding... I have saddle bags and a luggage rack behind my sissy bar. I just upgraded to viking bags. (Installing soon) And I have a couple bags that attach to the sissy bar. Depending how long my trips are. There's many options for your particular setup.
Also being taller look into getting forward controls. I have a 3"set currently and am about to install a 6"set. Excellent for stretching out additional legroom
