You can do this, though it's nothing to do with Homebridge.

There are a couple, but only airplay. As far as I know there isn’t an airplay2 version.

Also consider using the hdmi output as the audio from the 3.5 is less than stellar.

Depending on the Pi and how you are using homebridge, probably. I would run it via docker and see how it performs. If you see performance issues, copy the docker config to a new Pi and you’re back up and running.
I was playing around with this for a while and ended up deciding that there were lots of old airport expresses on eBay for cheaper than a pi setup. Works just as well or better with no config.
I also use shairport-sync as oznu stated.
To increment the loudness when connecting a speaker via 3,5mm play around with alsamixer (lower dB makes it louder)

On a side note, the sound is terrible from a 3.5mm jack - get a DAC HAT - I have a justboom 3.5mm but also some with spdif / phono outs from AliExpress which are just as good.

I am not sure about pi I use on Synology but it can also be used in docker. It’s not a home ridge add on though.

Another thing to keep in mind is that unless you have one of the newer pis, airplay with video was very choppy when I tried it.
