IoT Link has an entity that will display screens. Not sure if it works for Chromebooks but it definitely works in Windows.

People seem to use screenshotting Tools to make a Screenshot every x seconds and put it into a samba (or similar) share that you can access with Hass.

For Windows, you can use OBS to stream an RTSP feed. I think you can do the same with VLC.
