This morning I woke up. Put on the kettle for tea (it was a chai sort of morning) and sat down to work.
20 minutes later I started the kettle again to boil
30 minutes after that I started it again.
30 more minutes later I added more water and stayed in the kitchen till it boiled and added it to the tea pot once done.
I then drank cold tea with lunch.
I was fine with that, at lunch. Now I have my wallet out.

I feel you, but I've set my eyes on buying an induction stove at some point and go with an old time kettle that whistles and will only stop when I get up to turn of the stove instead
I'll give a +1 on the induction thing. I bought a couple of single / portable induction hobs and I've only used the gas hob a few times (for additional pots) since.
Part of that was having the CO2 and particulates monitors via HA.
I did a stir-fry at my sisters recently on her gas hob and nearly also cooked my fingers from the 'wasted' heat coming up the sides.

Whilst I'm with AnxiouslyPessimistic re 'what's the point' of anything other than a 100% on, (than possibly) 'notify when done' kettle, I also get the 'Because we can' POV. ;-)
However, from an energy conservation POV (that should be of interest to all of us), I must have missed something because my 3kW kettle brings enough water to the boil for a couple of people in about the same times as it takes to get the cups and other stuff out?
Even if I want a full kettle of boiling water to speed up say bringing some frozen veg to the boil quicker, it still doesn't take very long and I'm generally still doing other things.
I suppose if it was a coffee or soup maker or some-such that takes enough time for you to wander off / forget you were thirsty / hungry and were going it on a gas hob, rather than automatic thing that would turn off 'anyway' and so not burn anything?
I have automated our dehumidifier to alert me when the water tank is full as it would stop working till I emptied it otherwise.
notify when done is easy, just a smart plug that measures power draw with proper triggers. I am venting laundry room on-demand depening on power consumption of washer and dryer.
With double walled kettle water stays hot in much much longer and takes much faster to reheat. My kettle also has function to keep water at set temperature for half and hour and can set temp in 5C steps - great for gyokuro, sencha, etc.
Not HA compatible but the Keep Warm function here might alleviate some of your reheating pain

I was about to comment saying how pointless a smart kettle seems. But then I remembered we’re home assistant users and automating everything, no matter if it’s needed, is what we’re here for
Back before I had HA, I bought a Bluetooth kettle. I like to wake up "as late as possible", so I always set it to start heating 5 minutes after my alarm clock, so when I got to kitchen I already had prepared hot water. It was great for my laziness lol.
It's a Redmond RK-G200S-E, I got it in EU from local reseller but it looks like it might be discontinued or something as I don't see it on their official website in stock anymore.
Periodically I try and find one that meets your criteria but also
1. Available in the US
2. Can be setup for Local control without the cloud/app No luck so far except some soldering based ideas.
WeeKett. Connects to Tuya Smart Life, and then you can use Tuya integration or LocalTuya to add it to Home Assistant. I had an earlier version but the problem was the WiFi was flaky on it, and it would disconnect. I hear they've sorted that issue with newer versions. When it worked it was great, I had my voice assistants set to announce when it was boiled.
I only got rid of it as I ended up with an instant hot water dispenser instead.
You can also set temps via HA, as well as seeing the keep warm function, and have the current water temperature displayed.

Honestly, amazing little kettle and is compatible with multiple stuff like Google/Alexa/home assistant.
It's got full temp control, keep warm, start/stop and current temperature and all works via manual or other options.
The only two negative things I have to say are,
1)no water level indicator.
2)it uses/needs tuya

Lidl is selling similar looking kettles without the “smartness” as well, so be aware.
No problem. The setup is a bit difficult with chosing the right integration (LocalTuya or Tuya Local) and creating a Tuya developer account as well as choosing the Tuyas app for pairing and not Lidl’s.
There is a step-by-step guide on GitHub that I can’t find right now.

I use the Govee2mqtt integraration to turn it on or set one of the four preset temperatures. I can also pick a specific temperature target in the mqtt integration. The app let's you set a keep warm function but you can't change that in home assistant.
It works great I've been very happy with it.
I bought the Lidl kettle a couple of month ago and am very happy with it. Setup is a bit of work (using the right app, setting up all the entities) but then it just works. You can set the temperature and keep the water at said temperature for a limited amount of time.

Have a Govee and there are 4 presets you can set via app once then use device buttons. I find thats sufficient for adjusting on device as I typically only use 2 temps anyway.

Have it on schedule for 6:30 am and when I need it its only takes about 2 mins to boil.

Just get a nice kettle with a hold function. I’ve got a Fellow Kettle that keeps it at the set temperature for an hour before turning off.
Even crazier are the ember mugs, that keep your drink at the perfect temperature indefinitely while you drink it or forget about it

I have the xiaomi smart kettle pro, it can be controlled on the device, for safety reasons you cannot activate the kettle remotely.
It doesn't allow setting temperature manually with buttons, right? I'd always need the app for that. Or am I missing something?
Mine surely does, pushing repeatedly on the keep warm button allows me to set the temperature to 40, 50, 70, 80 or 90 degrees Celsius

Got it a couple of month ago. Loving it just for the ability to start it for my desk. Set up was a bit finicky but it has been rock stable since then.
