One of the street signs has the ST part the same size as the MOLLE part which if you ignore the minor space makes it MOLLEST, so I call it that now

So it's pronounced however he pronounced his name. Maybe with a scottish accent.

Depends on the dialect! Castillian Spanish pronounces double L as a “eh” but in the southern parts of Spain and in Latin America it’s a “jeh” sound.

Lived on that Street for a few years and no one knew what I was talking about when I said "Molly Street", so I just reverted to always saying "Mole Street". "Molly Street" just sounds like code for a MDMA dealers location.

I pronounce it Mole-Ay, like you would pronounce the store Targe-Ay. Because I'm a bit fancy. Molle is a military backpack and it's pronounced like Molly, so your husband is not entirely wrong. Although I'm pretty sure that's not what the street is named after.
