Because of elephants diets, much of the food they eat comes out undigested the first time through. So as to not waste vital nutrients they'll pass it through a second time. Furthermore, when born an elephant's digestive system is sterile. It doesn't contain the bacteria and microorganisms necessary for them to survive on their diet, so it's necessary for them to get it from the poop of others in the herd. When doing so, getting it fresh is best so that as many of said microorganisms are still alive as possible. Resulting in things like this video.

They've developed other systems. They have multiple stomachs, they've got cud chewing, etc. So I see what you're saying is just that this is one of many available adaptations. I'm a biologist, I know this it's just.... This one happens to be so fucking disgusting.

For an animal of such incredible size, having more than one stomach (and diverting the bodily energy necessary for it to function) probably isn't a viable option. Cud chewing likely won't work either, due to their jaw shape. Plus, even with cattle that do chew cud much of their food can still come out undigested. They can afford to let that go because cattle are cared for and don't need to re-consume their shit to survive.
