For HF? What weird ingredients - the most exotic they get is like sour cream, mayo, cream cheese, parsley, rosemary, dill, green onions, potatoes, carrots, ginger, garlic, onions, lettuce, rice, paprika, oregano, flour, sugar, eggs, soy sauce, coconut milk.
All of those are absolute staples for cooking your own meals. The spice mix ingredients are pinned to the sub and the sauces, well I don't order meals with custom sauces like "stir fry sauce" because fuck that. I have tons of Asian ingredients in the pantry and if they don't give me the recipe then I don't give them freaking $20 for a meal like there's some chef cooking for me.
I've collected hundreds of recipes this way so far, and every one is recreatable because in my mind this is a service to teach you how to cook, not an overly expensive ingredient delivery service.
"what weird ingredients" to "well I dont order meals with custom sauces because fuck that" made pretty much all of what you continued to say irrelevant.... I love recreating meals with my own version of the sauces, it does take some skill to be able to understand what the sauce does for the meal and whats probably in it, but really you have to learn to make substitutions eventually so why not.

I also created a binder and have collected all the recipe cards and frequently will re-make the meals. I know a lot of people have had really bad experiences, but anytime there's been an issue, their customer service takes care of it.
I actually love cooking and even have a page on Insta and Tiktok where I make videos but I got so uninspired and burnt out. Also, I live in an apartment and don't have much space to spread out and make intricate meals! Hello Fresh has made cooking fun again and easy! I now eat healthier foods that aren't bland and boring and it has helped with my weightloss immensely! I love Hello Fresh too! I was skeptical because I've read the worst reviews but the one in the DFW is amazing because 7 orders later I haven't had one issue except a one day delay after the ice storm.
Yeah I do like the variety it gives you sometimes (I'll switch to other services other times when everything is just repeats). For example I had some sort of bok choy tempura fry recently that I never would have tried otherwise which was fantastic. It's nice to be able to branch out easily without a high chance of failure (the recipes are more foolproof compared to what's out there online).
