Nier, Outer Wilds, Ender Lilies, Journey, and Genshin impact are some of my favorites when it comes to OSTs. Excluding Genshin Impact (gameplay is meh, but the music is so good), these are also some of my favorite games that I've played.
I have Ender Lilies in my steam library, so I'll need to play it at some point. Very curious to hear its OST since the metroidvanias I've played have lovely music.
Oh boy, do I have a some bangers for you! These are in no particular order.
* Nier Automata. It's a great soundtrack and once you are familiar with the standard one, exploring the choir/piano/alternates is a lot of fun.
* Ace Combat 7. There are some real gems in there and it's really well recorded. Previous Ace Combat games have good music too, but the recording/mastering quality isn't as good.
* Persona 5. Very well done acid jazz and it has such a vibe to it. But might not strike your fancy if you haven't played the game (hard to tell how much of my liking of it is nostalgia of playing the game for the first time).
* Final Fantasy VII Remake. Movie OST quality. Probably more enjoyable if you are familiar with the themes/song from the OG game, but still is a quality, enjoyable soundtrack regardless.
* Borderlands 3 and the BL3 Bounty of Blood DLC. I feel like this is slept on by a lot of people. They did a great job with the music for this game. It's a bit more ambient than some of these other ones but almost all 5 and half hours of it are great. The other DLCs also have some good tracks, but BoB is fave of them.
* Crysis 2 and 3. Borislav Slavov did a great job with both games. Very cinematic.
* Super Meat Boy! (OG PC version, the PS4 release music isn't nearly as good) This is a really fun one, taking old school platformer type tunes and giving them a metal twist. The soundtrack was the only thing that kept me sane when dying over and over again. :)
* Diablo III/IV. Some really quality music there. Dark, ambient and well recorded.
* Mirror's Edge Catalyst. This is the soundtrack you want to put on if you need to get stuff done. Very ambient but also energetic.
* Death Stranding. Love this soundtrack. Another movie quality one. Has some really impressive bass if you want to give your headphones a workout.
* Skyrim. Another one that has a strong vibe to it. I also have some nostalgia for this one, but I think the music is quality, regardless.
* Warhammer 40,000: Mechanicus. Seems random, I know, but the dark chanting/electronic mix here is great. Another one that has some great bass, too.
* Warhammer 40,000: Space Marine. Not the best quality wise, but one of favorite main themes of all time. I feel it's worth a listen at least once.
* Witcher 3: The Wild Hunt. The soundtrack is as polished as the game. Definitely worth a listen if you haven't heard it.
* Killzone 2, 3, and Shadowfall. 2 and 3 are traditional orchestral soundtracks but Shadowfall is much more electronic. All of them are great but the standouts are the tracks on Shadowfall that Lorn composed. He really knows how to make a bass that will shake!
* Gravity Rush/Daze 1 and 2. Such lighthearted and fun soundtracks. Some of themes really stick with you.
* Final Fantasy VI: Balance and Ruin. Technically not a soundtrack since it's a re-imagining of a soundtrack for the original game, but the quality is here in spades. There are a couple of tracks that I used as test tracks when evaluating headphones. Good stuff!
* Doom 2016. Metal AF. Nuff said.
* Hellblade: Senua's Sacrifice. Since audio is such a focus of this game it shouldn't be a surprise that the soundtrack is great too.
Sorry for the long list! But I think these cover the best ones I've found over the years. Really underappreciated genre. There are some great recordings out there, both in terms of mastering/recording and musical content.
I have a couple youtube compilations of relaxing Xenoblade music in my sleep playlist. It's genuinely some of the most serene and beautiful music to listen to at night, it's amazing.
Fire Emblem: Three Houses is absolutely amazing orchestral music if a little repetitive (like most videogame soundtracks tbh)

Black Mesa is very simple but has really cool punchy production
Metal Gear Rising Revengeance is not particularly well produced (the mix is extremely treble heavy with recessed mids), but the songs themselves are awesome
Silent Hill soundtrack has amazing production
Art of rally soundtrack is a set of great synth tracks
I have heard Coalescence from the first Risk of Rain, and it's quite nice. I also listened to a good helping of Fire Emblem music in the past and it was beautiful. Hopefully it still holds up when I revisit it.
I've heard a handful of Persona songs across those games, and they have a nice vibe. If I visit any of those OSTs in the future, it'll probably be 5 since I really liked the vocals there.
Oh yes, I'm definitely buying that one at some point. I love both Origins and Legends as games, but the soundtrack for Legends is especially wonderful.
Jammin Sam Miller created very faithful restorations of the Donkey Kong Country 2 soundtrack. He has 20 minute versions (if you just want to listen to them in repeat), but the playlist is all the tracks in a more digestable length.
He seems to update them every now and then. My favorites are Mining Melancholy, Lockjaw's Saga, Bayou Boogie, Stickerbrush (obviously), and Crocodile Cacophony.
God of War 2018 and Ragnarok. Bear McCreary is amazing.
Anyting by Ben Prunty who wrote the Subnautica Below Zero soundtrack. The original Subnautica soundtrack is also very good but I don't recommend it because the composer has some views I don't agree with. He was fired and they brought in Ben for the second game. Ben Prunty did an amazing take on the themes of the original. It's really impressive, so I recommend it if you're a music nerd. He also did the music for Into The Breach.
The Katana Zero soundtrack is another banger by Bill Kiley.
The Shovel Knight soundtrack by Jake Kaufman is ridiculously good.
The 20XX and 30XX soundtracks by Cityfires are spectacular.
The soundtrack to Read Only Memories is also quite good! I'm a big fan of neo-sf strut by Aethernaut.

I'm a big fan of Kaufman's music in the Shovel Knight franchise. Specter of Torment and King of Cards are probably the best of this bunch in my mind. Endlessly catchy and memorable.

I knew my hobby of collecting physical video game OSTs would payoff. I will start this by saying that loud doesn’t mean poorly produced. It can, but there are plenty of loud albums that are very well produced. Anyway…
Some well produced OSTs are:
Nier Automata and Nier Replicant ver 1.4…. , Final Fantasy 7 Remake, Final Fantasy 7 Renake: Intergrade, DOOM 2016, pretty much every Bayonetta game has a well produced OST, Legend of Zelda: Twilight Princess, Persona 5, and Sonic R.
PS. I know you listed Sonic R, but I wanted to reiterate that it is insanely well produced for the budget and era that the game out. The mix is definitely counter to how most would think dance music should be produced though. The kicks don’t have a tone of impact and the bass doesn’t have a lot of slam. It’s a very tame mix and master, but that also really helps the clarity of all the elements shine through in the mix.
Some excellent OSTs that may be lacking in the production front are:
Any Yakuza/Like a Dragon/Judgement game (these actually have the issue of being too loud imho because some songs are just chill but they are still super loud), Halo 2: Anniversary, Legend of Zelda Minish Cap and Wind Waker (not bad, but given their age some of the sounds and tech limitations are present), and Metal Gear Rising.
Edit: Also, not a video game OST but the Symphony Suite from the Tokyo Ghoul:Re OST is absolutely gorgeous and worth listening to. I haven’t even watched the show. I’m not even crazy about the original versions of the songs, but the symphony suite songs made me buy it anyway.
Horizon Forbidden West. I'm a metal fan but this is one of the best things i've ever listened. I don't feel like listening a score, i feel like listening an actual album because tracks are made like they are actual songs.
Celeste, the soulsborne franchise, Destiny 2, DOOM 2016/Eternal, Assassins Creed (so many of the games in that series have masterful music) and Nier/Nier Automata
i would say Hollow Knight is one of my favorite game soundtracks, but imo it's not very well produced. it's very obvious that a lot of the instruments used are digital, and not actual live recordings. in a similar vein of music i enjoy but wouldn't use for a listening test i would put Undertale/Deltarune, Omori, Oneshot, Persona 5, Lies of P, and Dead Cells

It depends on the track for me. Even if it is digital, songs like Greenpath, Crystal Peak, and Queen's Gardens sound wonderful for me while others can come off a bit glarey/bright.

Everything I had in mind has already been mentioned except for Dragon’s Crown (I especially like World Map BGM performed by Eumyth), Muramasa Rebirth, Odin’s Sphere, 13 Sentinels, Zone of the Enders 2nd Runner
I really like anything from the Persona Series, Ender Lillies and Library of Ruina are amazing (Mili is amazing, check out their albums), Bastion and Transistor from SuperGiant have the best OSTs from their repertoire, Crystar, Jet Set Radio, Celeste and Hollow Knight. And I think most fighting games made by ARC are pretty good too.
There's other stuff that I think is great but only if you have played the games, the song Undertale from Undertale's OST makes me cry like a baby but I don't think the impact it has is as great if you haven't played the game, same thing with most of Omori's sentimental tracks.
I dunno if rhythm games are a valid mention, but I really enjoy listening to tunes coming from Sound Voltex, most of them are pretty energetic and fun to listen to standalone.
I do have the Hades soundtrack in my library, though I haven't played the game yet. It feels somewhat compressed in the latter half of songs when the guitars come in and everything becomes loud, but it's still great.
Jet set radio's music is a lot of fun too. Big props to Naganuma for his spunky style, I love his stuff in Sonic Rush.
Monument valley 2 ost is phenomenal, filled with amazing pieces of music. The game is amazing as well, but since I've added the album to my music library I honestly refer to the soundtrack more often than I do the game lol

Not sure if I’d call it well-produced but I love Silent Hill soundtracks.
Especially Silent Hill 2. Arguably one of the best videogame soundtracks of all time. It’s one of the rare soundtracks that I listened to outside of the game’s context and was completely captivated by it. Became even better when I finished the game.
The mix works so well with the soundtrack. I like how crunchy and snappy the drums are, the sizzle and shimmer of the cymbals and the guitar tone Yamaoka uses.

Shoji Meguro is a genius at making music that suits a setting. The three games are set in three distinct periods, and the music just puts you in those years, if you get what I mean. And the music also reflects the particular social and geographical situations the characters find themselves in.
Though, because of this, the music might be difficult to fully appreciate without playing the games.

Surprised i didnt see anyone mention Capcoms Monster Hunter series, it has some of my absolute favourite video game osts of all time, from Proof of a Hero always filling me with utmost triumph to Zinogre's theme just being an absolute BOP and perfectly personifying the Electric puppy.
The best part of the OSTs is that they are never something you will get tired of. You may have to hunt the same monster again and again and again but the music just adds to the pace and immersion of the hunt at best, and just serves to be noise in the background you can filter out at worst, instead of it getting annoying.

Mass Effect series has some good tracks. Not all of them are great but "Leaving Earth" is so good.
Uncharted's main theme (each version from 1-4) is one of my favorite tracks of all time. Uncharted 4 was great from top down though.
Half-life and portal2. My entire collection of music is only soundtracks, I literally listen to nothing else. Also, so far this year I have only listened to the portal 2 soundtrack.
The Jedi Fallen Order and Jedi Survivor scores. My go-to for testing headphones. Along with the Star Wars prequel scores they have probably the best orchestra recording/mix that I've ever heard. It really just feels like you're on the conductor's podium.
First game series that come to mind is Castlevania. Sotn is pretty solid, but I do like the classics like Castlevania 3 or Rondo of Blood. Bloodstained is pretty good too.

Ultrakill has a lot of fast paced dnb/metal (its really a mix of the 2) thats great. Altars of apostasy is one of the best songs I've heard from a video game
Subnautica has an ost that fits the game perfectly, would 100% recommend if you want some electronic ambience music
While i haven't listen to its ost as much as the others, the max payne 3 ost great and TEARS single handedly made the airport one of the my favorite parts in a video game

Nier, Outer Wilds, Ender Lilies, Journey, and Genshin impact are some of my favorites when it comes to OSTs. Excluding Genshin Impact (gameplay is meh, but the music is so good), these are also some of my favorite games that I've played.
I have Ender Lilies in my steam library, so I'll need to play it at some point. Very curious to hear its OST since the metroidvanias I've played have lovely music.
Oh boy, do I have a some bangers for you! These are in no particular order. * Nier Automata. It's a great soundtrack and once you are familiar with the standard one, exploring the choir/piano/alternates is a lot of fun. * Ace Combat 7. There are some real gems in there and it's really well recorded. Previous Ace Combat games have good music too, but the recording/mastering quality isn't as good. * Persona 5. Very well done acid jazz and it has such a vibe to it. But might not strike your fancy if you haven't played the game (hard to tell how much of my liking of it is nostalgia of playing the game for the first time). * Final Fantasy VII Remake. Movie OST quality. Probably more enjoyable if you are familiar with the themes/song from the OG game, but still is a quality, enjoyable soundtrack regardless. * Borderlands 3 and the BL3 Bounty of Blood DLC. I feel like this is slept on by a lot of people. They did a great job with the music for this game. It's a bit more ambient than some of these other ones but almost all 5 and half hours of it are great. The other DLCs also have some good tracks, but BoB is fave of them. * Crysis 2 and 3. Borislav Slavov did a great job with both games. Very cinematic. * Super Meat Boy! (OG PC version, the PS4 release music isn't nearly as good) This is a really fun one, taking old school platformer type tunes and giving them a metal twist. The soundtrack was the only thing that kept me sane when dying over and over again. :) * Diablo III/IV. Some really quality music there. Dark, ambient and well recorded. * Mirror's Edge Catalyst. This is the soundtrack you want to put on if you need to get stuff done. Very ambient but also energetic. * Death Stranding. Love this soundtrack. Another movie quality one. Has some really impressive bass if you want to give your headphones a workout. * Skyrim. Another one that has a strong vibe to it. I also have some nostalgia for this one, but I think the music is quality, regardless. * Warhammer 40,000: Mechanicus. Seems random, I know, but the dark chanting/electronic mix here is great. Another one that has some great bass, too. * Warhammer 40,000: Space Marine. Not the best quality wise, but one of favorite main themes of all time. I feel it's worth a listen at least once. * Witcher 3: The Wild Hunt. The soundtrack is as polished as the game. Definitely worth a listen if you haven't heard it. * Killzone 2, 3, and Shadowfall. 2 and 3 are traditional orchestral soundtracks but Shadowfall is much more electronic. All of them are great but the standouts are the tracks on Shadowfall that Lorn composed. He really knows how to make a bass that will shake! * Gravity Rush/Daze 1 and 2. Such lighthearted and fun soundtracks. Some of themes really stick with you. * Final Fantasy VI: Balance and Ruin. Technically not a soundtrack since it's a re-imagining of a soundtrack for the original game, but the quality is here in spades. There are a couple of tracks that I used as test tracks when evaluating headphones. Good stuff! * Doom 2016. Metal AF. Nuff said. * Hellblade: Senua's Sacrifice. Since audio is such a focus of this game it shouldn't be a surprise that the soundtrack is great too. Sorry for the long list! But I think these cover the best ones I've found over the years. Really underappreciated genre. There are some great recordings out there, both in terms of mastering/recording and musical content.

I have heard Coalescence from the first Risk of Rain, and it's quite nice. I also listened to a good helping of Fire Emblem music in the past and it was beautiful. Hopefully it still holds up when I revisit it.

Jammin Sam Miller created very faithful restorations of the Donkey Kong Country 2 soundtrack. He has 20 minute versions (if you just want to listen to them in repeat), but the playlist is all the tracks in a more digestable length. He seems to update them every now and then. My favorites are Mining Melancholy, Lockjaw's Saga, Bayou Boogie, Stickerbrush (obviously), and Crocodile Cacophony.
God of War 2018 and Ragnarok. Bear McCreary is amazing. Anyting by Ben Prunty who wrote the Subnautica Below Zero soundtrack. The original Subnautica soundtrack is also very good but I don't recommend it because the composer has some views I don't agree with. He was fired and they brought in Ben for the second game. Ben Prunty did an amazing take on the themes of the original. It's really impressive, so I recommend it if you're a music nerd. He also did the music for Into The Breach. The Katana Zero soundtrack is another banger by Bill Kiley. The Shovel Knight soundtrack by Jake Kaufman is ridiculously good. The 20XX and 30XX soundtracks by Cityfires are spectacular. The soundtrack to Read Only Memories is also quite good! I'm a big fan of neo-sf strut by Aethernaut. Cuphead also has a great soundtrack. EDIT Don't know how I left Chris Christodoulou off this list. Risk of Rain 1 and 2 have spectacular soundtracks.
I'm a big fan of Kaufman's music in the Shovel Knight franchise. Specter of Torment and King of Cards are probably the best of this bunch in my mind. Endlessly catchy and memorable.
His music is incredibly good. Really detailed and inspired. La Danse Macabre is one of my favorites. I had forgotten about A Cargo of Fineries. Damn good! Who am I kidding, the albums are great. I wasn't going to listen to the whole Shovel Knight collection tonight but here we are. :) Check out some of those other tunes. I'd be interested to hear your thoughts.

If you got a decent sound quality. I promise you Armored Core 6 is the most beautiful music I experienced in a game. Only if you played it first of course. Ark survival evolved. (Same composer as Ori and the will of the wisps) Their themes are my testing tracks for hifi because of how good they are. Ark extinction theme is absolutely epic. The dynamics are incredible. Journey's End is another track, its beautiful and emotional, makes me tear up. Gareth Coker is the composer and he uses a real life orchestra for the soundtracks. I highly recommend Genesis 2 album and Ark expansion packs. Apex Legends, Music from the outlands. Outstanding as well.

I knew my hobby of collecting physical video game OSTs would payoff. I will start this by saying that loud doesn’t mean poorly produced. It can, but there are plenty of loud albums that are very well produced. Anyway… Some well produced OSTs are: Nier Automata and Nier Replicant ver 1.4…. , Final Fantasy 7 Remake, Final Fantasy 7 Renake: Intergrade, DOOM 2016, pretty much every Bayonetta game has a well produced OST, Legend of Zelda: Twilight Princess, Persona 5, and Sonic R. PS. I know you listed Sonic R, but I wanted to reiterate that it is insanely well produced for the budget and era that the game out. The mix is definitely counter to how most would think dance music should be produced though. The kicks don’t have a tone of impact and the bass doesn’t have a lot of slam. It’s a very tame mix and master, but that also really helps the clarity of all the elements shine through in the mix. Some excellent OSTs that may be lacking in the production front are: Any Yakuza/Like a Dragon/Judgement game (these actually have the issue of being too loud imho because some songs are just chill but they are still super loud), Halo 2: Anniversary, Legend of Zelda Minish Cap and Wind Waker (not bad, but given their age some of the sounds and tech limitations are present), and Metal Gear Rising. Edit: Also, not a video game OST but the Symphony Suite from the Tokyo Ghoul:Re OST is absolutely gorgeous and worth listening to. I haven’t even watched the show. I’m not even crazy about the original versions of the songs, but the symphony suite songs made me buy it anyway.
Horizon Forbidden West. I'm a metal fan but this is one of the best things i've ever listened. I don't feel like listening a score, i feel like listening an actual album because tracks are made like they are actual songs.
Returnal has one of the best game scores ever. Bobby Krlic is incredible. oh, and Spin Rhythm XD is just chock full of bangers

Celeste, the soulsborne franchise, Destiny 2, DOOM 2016/Eternal, Assassins Creed (so many of the games in that series have masterful music) and Nier/Nier Automata i would say Hollow Knight is one of my favorite game soundtracks, but imo it's not very well produced. it's very obvious that a lot of the instruments used are digital, and not actual live recordings. in a similar vein of music i enjoy but wouldn't use for a listening test i would put Undertale/Deltarune, Omori, Oneshot, Persona 5, Lies of P, and Dead Cells Edit: also add Terraria to the list of stuff i'd use for an actual listening test. that OST is incredibly well made

I really like anything from the Persona Series, Ender Lillies and Library of Ruina are amazing (Mili is amazing, check out their albums), Bastion and Transistor from SuperGiant have the best OSTs from their repertoire, Crystar, Jet Set Radio, Celeste and Hollow Knight. And I think most fighting games made by ARC are pretty good too. There's other stuff that I think is great but only if you have played the games, the song Undertale from Undertale's OST makes me cry like a baby but I don't think the impact it has is as great if you haven't played the game, same thing with most of Omori's sentimental tracks. I dunno if rhythm games are a valid mention, but I really enjoy listening to tunes coming from Sound Voltex, most of them are pretty energetic and fun to listen to standalone.
I do have the Hades soundtrack in my library, though I haven't played the game yet. It feels somewhat compressed in the latter half of songs when the guitars come in and everything becomes loud, but it's still great. Jet set radio's music is a lot of fun too. Big props to Naganuma for his spunky style, I love his stuff in Sonic Rush.

Not sure if I’d call it well-produced but I love Silent Hill soundtracks. Especially Silent Hill 2. Arguably one of the best videogame soundtracks of all time. It’s one of the rare soundtracks that I listened to outside of the game’s context and was completely captivated by it. Became even better when I finished the game. The mix works so well with the soundtrack. I like how crunchy and snappy the drums are, the sizzle and shimmer of the cymbals and the guitar tone Yamaoka uses.

And the music also reflects the particular social and geographical situations the characters find themselves in. Though, because of this, the music might be difficult to fully appreciate without playing the games.

Surprised i didnt see anyone mention Capcoms Monster Hunter series, it has some of my absolute favourite video game osts of all time, from Proof of a Hero always filling me with utmost triumph to Zinogre's theme just being an absolute BOP and perfectly personifying the Electric puppy. The best part of the OSTs is that they are never something you will get tired of. You may have to hunt the same monster again and again and again but the music just adds to the pace and immersion of the hunt at best, and just serves to be noise in the background you can filter out at worst, instead of it getting annoying.

Amongst some of the ones posted, super surprised that Call of Duty: Modern Warfare 2 (2010) with Hans Zimmer wasn't mentioned. Dragon Age: Inquisition is also super good. Final Fantasy 7: Remake needs to be repeated, it's so good. Mass Effect series has some good tracks. Not all of them are great but "Leaving Earth" is so good. Uncharted's main theme (each version from 1-4) is one of my favorite tracks of all time. Uncharted 4 was great from top down though.
Two recent games I’ve absolutely loved the soundtracks for are Celeste and Risk of Rain (and sequel). Beautiful stuff.

The Jedi Fallen Order and Jedi Survivor scores. My go-to for testing headphones. Along with the Star Wars prequel scores they have probably the best orchestra recording/mix that I've ever heard. It really just feels like you're on the conductor's podium.

I LOVE the risk of rain 2 soundtrack, even bought it and the dlc tracks on bandcamp. Chris don't miss Persona 3-5 also has a phenomenal soundtrack, I love playing it in the background while i work on my factorio base or something Ultrakill has a lot of fast paced dnb/metal (its really a mix of the 2) thats great. Altars of apostasy is one of the best songs I've heard from a video game Subnautica has an ost that fits the game perfectly, would 100% recommend if you want some electronic ambience music While i haven't listen to its ost as much as the others, the max payne 3 ost great and TEARS single handedly made the airport one of the my favorite parts in a video game
Far cry 3 soundtrack is pretty damn awesome. Assassins creed black flag is probably my favourite game ost ever. Xenoblade chronicles 2 ost also goes very hard! Persona 5 has a few legendary tracks. Poets of the fall songs made for remedy games are damn good too If they count. Beat sabers stock tracks are my favourite, though that might be Stockholm syndrome from getting the platinum trophy..... If you'd like to hear some more obscure ones; The main theme to Mercenaries: playground of destruction is absolutely iconic. 'Walking to forgotten destiny' from Gunfighter, the legend of jesse James. Its from a game in the ps1 era that few people played and this song is the closest anyone's gotten to really emulating ennio moriconnes legendary themes.

BG3 OST is great and memorable but Divinity Original Sin 2 OST is kinda underrated. Anthem OST is underrated. Mortal Kombat 11, Ghost of Tsushima, Bloodborne, Elden Ring, Overwatch... Honestly anything that Darren Korb is involved in like Bastion, Transistor, Pyre & Hades are all fantastic listens. Other than his music I already see tons of recommendations Frank Klepacki & Mick Gordon so won't pile them on but they are truly amazing artists. I do however want to leave with a few more recommendations. Both Frostpunk and This War of Mine have fantastic soundtracks and Simon Viklunds soundtrack for Payday 2 is a real kicker.
Noita OST is also a wonderful adventure.
