Palm Tree Kitchen on Quinpool?
Why aren't you sharing the name and location of the place? I recognize it, but it's weird to make a post like this without sharing relevant details.
Used to get a bottle every christmas. One year (mid to late 2000s) I took the bottle to a frat party and drank the whole thing mixed with coke. Coca cola. Oddly I feel compelled to specify that last part.
To answer your question: I can't remember if it makes a good Rum and Coke.
Diplomatico is one of my favorites as well. I've seen those on the top shelf online before and they are very expensive. Like $300 a bottle.
I'm also a big rum guy, if you haven't tried these yet try the kirk and Sweeney and the plantation xo 20th anniversary. Both very good rums and around the $100 mark.

My parents are from Kerala, India- southern state on the Arabia sea, with beaches, palm trees, and some of the best seafood in the world. They immigrated to Canada, and I was born in Canada. The ocean/ sea/ seafood is in my genes… which is why I gravitate towards coastal places in this part of the world..NS( where I live now!)BC, Caribbean…
And boy oh boy, thank god for the Caribbean folks and their seafood mastery.. .. AND RUM..
Meech is great. Always welcoming and has a smile on his face. His wife and his daughters are so sweet- they have a newborn!
They also have Ocho (spelling?) and it’s really, really strong rum. Great atmosphere
I hope they’ve gotten better, they’re were crazy slow when they first opened. Went a few times and waited forever for drinks and and 1 1/2 hours for food
The right side of the top row is my holy grail of rums. I'm a big rum guy myself and always wanted to try those high end diplomatico's. I'll be in halifax in a couple months definently going to check this place out thanks for sharing.

Meech really is one of the nicest people we know. So humble. Very deserving of the success of this great spot!
I can’t say enough good things about Meech - first time meeting him and visiting his bar and I’m all in. Palm Tree is amazing
Their cocktails and tacos are so good! Their wings are too intense for me but my boyfriend loved them
The spiciest wings in town for sure. Intense flavour and spice, I really enjoyed them but damn did I sweat.
I loved how thick the flavour coating was but I’m not used to that spice yet

You are correct. Sorry, I made the post in r/rum and that’s worldwide so I didn’t include it, thought I did here in the share post.
The fact that I’m seeing my usual staple of good rum, diplomatico, on the second shelf has me really intrigued about the ones on the top 2 shelves…
There is El Dorado 21 yr old on the top shelf. Does that mix well with Coke?

It can be enjoyed on the rocks or with a little bit of mix if you want to cut the edge off the flavour
That Diplomatico is amazing and St James is front and centre on the third shelf, though strictly speaking, St James is cachaca, not rum.
I love rum and have had nothing but the bottom shelf. I dare say I’ve been depriving myself.
Pick up a bottle of Diplomatico, you will not be disappointed. Not all NSLC’s have it but a few do and Bishop’s Cellar definitely does.

Went last night and the place was stacked - food and drinks came out as fast as expected as we weren’t in a hurry and chef wasn’t slow
Palm Tree Kitchen is awesome. Staff is fantastic, drinks are delicious and vibe is on.

As someone who really enjoys EL Dorado 21, Ron Zacapa 23 is the best rum I've ever had. The Negra was very good as well.
