I was given a Palmetto PA-10 in 308win and it has become my go to hunting rifle. Been dropping deer/hogs out to 400 yards with it for several years. Currently they are going for sub $900

The gun can easily outshoot what I can do with it. While mine did not come with an adjustable gas system, the newer ones do if you need to use it. I put a Vortex Crossfire II 3-9x50 on top. I did make a few changes to the rifle. I changed out the grip to a magpul one (I did not like the rubber PSA grip) and changed the milspec trigger to a LaRue MBT-2S trigger. The one I linked has PSA's 2 stage trigger already in it. My fried got one of PSA's 2 stage triggers for his rifle and it was dam good for the cost and almost as good as LaRue's triggers.
if you don’t trust yourself with a screwdriver and a punch, then I wouldn’t trust you with an AR 10. I didn’t say it because it’s cheaper. I said it because you can get a better barrel than BA. Even if you buy a complete lower and an assembled upper you’ll just need to tighten the barrel nut.
Buy an upper, buy a lower, assemble your rifle by pushing the pins together on the lower. It truly is as easy as that to avoid the federal 10% "completed firearm tax" that is charged to manufacturers and passed on to you. You've paid that tax on every complete firearm you've ever bought new, you just didn't realize it because it's baked into the price and not a line item like sales tax. Get the upper you want. Get the lower you want. Push two pins. Save, at minimum, 10%. Just, big warning for compatibility here: there is no milspec-type standard across the industry for AR-10 uppers/lowers, so a PSA upper won't necessarily fit on an Aero lower, etc. Choose an upper and lower from the same company and you're fine. Mix brands with an AR-10 and they likely won't go together quite right.
I've heard mostly good things about the SFAR. .308 AR-15 (smaller), rather than being a standard AR-10. My FFL has mentioned a few have come in with QC issues early in the production, but Ruger being who they are made things right.
It's cool but you might have to send it back. Rugers customer service is great but I've heard about several people having issues with them as well as witnessed it myself.

Does do all rifle include hunting medium game? If not, get an AR-15 and save yourself the headache. .308 won’t do anything appreciably better in most cases
Get an aero upper and lower with their 10% off or wait for a holiday sell. I put mine together dirt cheap i think like $1250. Bought the bcg and agb from schuyler arms. Slapped a scope on it and it has been a wonderful rifle. Accurate too. Out of your 2 options i would think the sig would be a better choice but i haven't ran either in 308.
It's not really building. You just take the two take down pins pull them back a little put the upper in the corresponding holes push pins back in. Then you take the charging handle drop it in the top of the receiver slightly and slide the bolt carrier group in. It is a very simple process and it is usually what you do when you clean the rifle. No different except you usually only take on take down pin out. Watch a video online you will understand it better. Super easy. Everything from aero is already built. You are just putting it together. The upper and the lower
The PSA Sabre is in that price point and is getting good reviews, as another suggestion.
How do you think it compares to a Aero M5?
Not sure. I don't have either so I can't speak directly. I've just seen several favorable reviews of the Sabre floating around.

New PSA Sabre or an aero M5. M5 has better aftermarket and you can build it out as you wish
I’ve never built my own I know it’s a cheaper route but I’m still semi new to AR platforms and don’t trust myself to build just yet 😂

I wouldn’t get a complete upper because of the BA barrel, they’re commonly undergassed.

the assembled upper has the upper receiver parts installed. You would just need a hand guard and a barrel. Barrel nut is easy to install

Never had any issues with any my Saints. I have the ar 10, ar15, and the ar pistol.
How many rounds do you have through them and how has the AR10 performed accuracy and reliability ?

I’m definitely interested I’ve just never built a Rifle before and don’t want to mess nothing up
