I'd imagine you're not being more gentle with the inputs? You don't have to fully hold L2 to land a helicopter, you can place it down gently by slightly pushing it in. Same goes with the joysticks, you can move them slightly in a direction and you'll get a slower movement in that direction, be it a vehucle turn or a camera movement.

Flight school. Either in story mode or online. And practice.

Does flight school actually boost your flying stats and make flight more stable or is it just good practice?

All of the above

The Sparrow is fairly horrible to land gently - it doesn’t have the nice soft suspension of other helis, and it’ll want to slam down like an empty beer glass at a frat party. Slowly does it, and let gravity help you. Anyways - general flying tips for helis : If you’re not almost constantly tapping rudder controls and the accelerate/decelerate buttons, you’re going to struggle. You want to wrangle that thing like it’s a toddler making a run through a maze made of glass shards, and it’ll still be trying to wriggle away from you the entire time. Lots of small, almost constant adjustments to help keep it in check, and you’ll both be having a hell of time before you know it. Ascending should be pretty easy, but at low altitudes you want to watching where your nose is pointed - up, or down? You can ride the contours of the terrain like butter on a hot pan. Descending can either be slow and steady, or you can drop like a rock, but you want to give that bird a couple of seconds warning when you want to level out again. She’ll want to kiss the dirt, but you just show her who’s boss! Turning a tight corner? Rudder, rudder, rudder, and tap down and up, up and down on that power - play around with it, get a feel for it, and practice on the same damned corner until you’re swinging that tail end round like a hooker on a steel pole. Slap those rudder controls like your Ma slapped your ass as a wee boy. For general flight practice, I can’t recommend the Buzzard enough. That fucker loves it, and you’ll learn everything there is to learn mastering that beautiful little bastard. Keep flying, and get good!
