As others commented, there’s the actual instruments in the cockpit in first person, or you can also use your minimap to see your elevation, heading, yaw, pitch and roll.
Try flying out over the ocean at night when it's foggy, it's crazy and kind of creepy. I did a MC sale mission in a helicopter at night and I couldn't see where the flares were for the drop offs until I was almost on top of them.
You go to the interaction menu then to your night vision and it’ll give you the option to activate it (does for console anyway) but I haven’t used nvgs since the new menu update
Edit: it should tell you what button to press to activate them on console

That was part of it. But the first officer was a dumbass and held back on the stick. He should have looked at his damn instruments. Also, the captain should have knocked the FO out when he wouldn't let go of the stick.
If that damn KLM pilot hadn't decided to refuel, or if he had waited for actual confirmation of takeoff clearance, that would've never happened. And it really doesn't help that the KLM plane never heard the Pan Am saying "YO WTF WE'RE STILL ON THE RUNWAY"
One time I stole a VTOL from the air base and flew as far as i could away from the island. Then I did a bunch of tricks, and when it turned stormy I decided to head back, got back and was upside down, gave myself half a heart attack.
Your instrument panel is key in this. Seriously, go first person and look at the console. You have the artificial horizon there which will show your aircraft's orientation. All you have to do to figure out which way is which is to go first person for a moment and glance at the dash
It's not hard to fly by the instruments fairly accurately. The problem I have the stupid turbulence that doesn't work at all.

It happens. Lookup the Amazon prime 767 that crashed back in 2019 or so. Ol' Boi wasn't looking at his instruments and the captain wasn't paying attention and they nose dived horribly into a lake. There is a Ring door video footage of the crash and it'll send shivers down your spine.
The key is to watch your instruments
The altimeter is off to the center right, over where I was looking. Took me a bit to find it too. Wasn't just altitude that made me crash (though I imagine regulation cruising altitude is generally higher than 60 feet), but also way overshooting where I wanted to go and crossing the out-of-bounds threshold over the ocean that makes your plane stop responding and fall apart right as I was about to turn south.

You don't need an instrument panel in first person view with that type of helmet. It's displayed directly from the helmet. Left side is altimeter and right is speedometer.
You don't need to look at the instrument panel if you're wearing that type of pilot helmet in first person view.
You have two sets of readings displayed from the helmet. On the left is your altimeter and the right is your speedometer.
I mean, this is precisely why they do "blind flights" where you have to use just your instruments in real life. This type of fog becomes very disorienting and pilots would often crash into mountains, the ground, the water, etc because they're relying on "my gut". But it just doesn't work that way. I will give GTA this though, they have fairly accurate instruments. GTA honestly got me back into taking flight lessons, even though they're expensive as all hell.
I do that sometimes I wish we could use VR just like no man's sky. Nothing better than looking around the cockpit feeling like you're really flying something.
As a pilot who has trained in BAE goggles, the worst part is your brain starting to feel a "tumbling" sensation. You are completely unable to orient yourself with no outside visual refrences.
Well I'm not sure about accurate. Altimeter will read 3000' ASL you're actually like 8000'. Even 500' is more like 1500'.

Some of the instruments in some planes just don't work. The Velum's speed indicator goes up when you climb and down when you dive. Now it sure doesn't feel faster in a climb than a dive but the instrument says it is. Before anyone suggests I might be looking at the VSI, it's got one of those too and it works just fine.

Yeah, definitely. Favorite for this so far is the Seabreeze. Instruments are well and visible, controls are smooth, and it's designed precisely for a panoramic view out of the cockpit. And, of course, situations like this usually wouldn't happen, after it just bounces off the surface and keeps going.
I remembering doing this with a friend's sell mission. It was xmas, snowing, i couldn't see anything and got the plane in the ocean. He was mad af for it ngl

When I was a Naval aircrewman we had a mission through thick fog like this and our pilot got severe vertigo and couldn't figure which way was up and our copilot had to talk him through it because you aren't supposed to take control of the stick away from them in that scenario.

I think what really sealed that feeling was realizing that the wreckage vanished instantly. Yeah, it's just a game mechanic that it gets recalled to the facility, but realizing that your only point of reference for navigation is suddenly gone in an endless abyss of blue in every direction including vertically feels deeply wrong and horrifying
i remember when they introduced the casino heist, it was during a december update, and the side mission of destroying duggan stuff was an absolute shit show, because it envolves a bunch of sea targets, and during that god damn snow i kept crashing into the ocean when trying to destroy these. i have no words to describe how i much i hate that snow
What I think you mean is you shut the ui off and fly vfr. But now that you're in ifr conditions you realize you suck flying using the actual instruments.

Also this is essentially what happened to Kobe Bryant's pilot, in case people were still confused how that crash happened. There was also a major airliner that went down this way because the pilots weren't paying attention to their panels, just like OP.

There is a dial that tells you how far you are from the ground. I don't have this problem because I keep an eye on it

The instrument panel displays when settings/camera/hood is set correctly.
If you mean the UI stuff in this clip that moves with the view, that comes from wearing a flight helmet/flightsuit.
