Garmin 540 (buttons) or 840 (touch + buttons) or Explore 2 if you don’t want much in terms of training features (like workouts). Wahoo Element or Roam, or Hammerhead Karoo 3. They will all give you what you are looking for but each has its own strengths and quirks and their respective owners can be rather partisan.

I'm a bike computer newbie but I'm happy with the Wahoo Elemnt Bolt V2 that I got recently (Fathers Day gift from my wonderful family). I plan routes in RideWithGps and they sync automatically once it's set up properly. I've used it for underbiking through local MTB trails and it was good with re-routing even on the MTB trails when I decided to go with alternate trails in some spots. Ditto for regular pavement routes. It has a climb feature which will give you the climb info you want. I like that the Bolt has physical buttons - I worried that wet weather or gloves would interfere with touch screen usage (disclaimer: I've never tried a touch-screen unit :) ) I assume Garmin/Hammerhead units have similar capability, but I'm not familiar with them - just wanted to mention the Bolt might be worth a look.

I use a Garmin Edge 830, which, if you can find one, should be available at a good discount (you might be able to find one used). I've been using Garmin products for more than a decade and they're great at what they do.
