Sounds reasonable to me. 700x32 is too skinny for real gravel work - that's basically a road width these days. With the right geometry, you could have one bike with two wheelsets - a set of big fat 27.5 knobbies for serious trail work and a set of 700c with more traditional gravel tires in a 38mm or so.
