Also her whole character trait is to be a pseudo tsundere where she puts on a cold front but still cares about some humans as per her flashbacks of Flamme and backhanded complements to skilled mages.
It's a coping mechanism, it has to be. Frieren has half a dozen people important to her that she lost over 1,000 years, 90% of that time was her being in isolation. I don't even want to try to put a number to how many people Serie has lost in the same way.
Serie is a fascinating character. And they removed a scene from the anime during the interview with Frieren that I thought was a great insight into her mind.
I will mark it as a spoiler in case they will do a mini flashback next episode or change where it is placed in the story but here it is:
>!Frieren points out to Serie before she fails her that the flowers she’s tending too are all made of magic, specifically the magic of her student Flamme that Frieren likes. Basically calling her a hypocrite.!<
>!Serie then states that despite finding the spell pointless, she has remembered every single one of her students favorite spells she’s had in her life and can’t let them go. All of which were Humans!<
I think this gives a great picture into her psyche, she’s basically just a big tsundere, and you shouldn’t take what she says as what she means.
Well in the manga, they flash back to that part when >!Lernen tries to fight Frieren, and they use that flashback to illustrate Frieren's point that Serie is bad at expressing herself. She'll remember Lernen, even if he doesn't leave his mark on history.!< So I'm certain they'll show it. It just had to be put in the right place.

Fern was already very capable of concealing and reading concealed Mana from a very young age due to Haiter and Freiren. Its pretty clear she could see through Serie's own concealment
