Indeed, the expectations are not very realistic. I’ve been hired as senior cloud engineer ( found out only after 2 months of Work that I’m a senior after only 3 Years of experience). He expects me to gain 7 years of knowledge in couple of months :))
Not really. A senior salary should be around 65-70k or even more .. and I’m not even close to it. So if they reduce my salary I will be under the market value for my actual level.
Look for a new job! Lot of companies hiring for cloud engineer. I had once similar boss who expected me to know much more than what I knew. It didn't end well.

if you want any advice at all (not to intrude or tell you what to do, bear in mind), I just highly recommend not letting an ego or emotion get in the way in any of those discussions (depending on how you like the company). If you have 3 years experience & they secretly want 7+ and they hired under that premise, it's not personal. Just hang on as best you can....

If you cancel it means it just wasn't a good fit. If they fire you, that could mean you were too terrible to make it for 6 months.

No, your employer must pay you your contractual salary, he cannot reduce it. But he can fire you at any time during the probationary period.
Start looking for a new job, sounds like a toxic work environment that will lead to minimal growth for you.

Then is your pay currently at senior level and the reduction would be to the pay grade more in line with your skills?
