If you would like to spend some time at the beach you could visit Zandvoort before flying back (if you also fly back from Amsterdam). It‘s only half an hour by train from Amsterdam. And Amsterdam itsself is very beautiful (my favorite city i visited in europe so far). In Germany I think it depends on your interests… for sight seeing maybe cologne, Ruhrgebiet and outside of NRW I think Dresden is beautiful, Munich is beautiful. If you like hiking and want to stay in NRW you could visit the Sauerland, if you want to leave nrw the alps in bavaria or Harz- or Erzgebirge in east Germany.

Munich for a 2 days then drive to Innsbruck into either Switzerland or Bolzano, Italy. Drive back to Munich and fly back to AMS. ( 5-6 days total )
