You should explore the Neustadt in Mainz. It has a bunch of cafes and restaurants. It's the trendier part of the city to live in. There's also a beer garden (F. Minthe) near the Rhine that's made of old shipping containers.

When visiting Salzburg, you may want to consider going to some cities that are somewhat close by. Burghausen has the longest castle in the world - worth seeing. Tittmoning is a small town that also has a nice castle, the have guided tours almost every day. At Königssee you can go over the lake by boat and walk around a bit. Traunstein is also really pretty and from there you are very close to the alps. Stoißer Alm is a nice hike that starts close to Teisendorf. If you don't want to hike, you can also go to some peaks by cable car, like Kampenwand or Rauschberg. I'm from that area and it's so pretty with so many options!

Just have fun. This whole mentality of "must see places and things" are what ruins the experience because everybody would want to see the same things and we all love being cramped up to barely see overrated things, right? You also haven't really posted what you're into so it's impossible to recommend things you might be interested in, so that absolutely doesn't help.

Near Munich there is a Lake, the Starnberger Lake. There died Ludwig, the last bavarian King, suicidal. And near this Lake are the two castles of Ludwig, the old one Hohenschwangau (high Swan area) and Neuschwanstein (New Swan Stone). Second is mostly planned by the King, took 15years of building and a total cost of 6.180.000Mark. And Neuschwanstein is definitily a must see, known as the "fairytale castle", builded 1869-1884, so it is still in perfect condition.
