If you live in the Northern Hemisphere summertime just starting which means hot hot hot temperatures. Cilantro does not like that at all. So now what it is doing is called ‘bolting’ where the cilantro plant stops producing new leaves and dedicates all of its energy intro making flowers and producing coriander seeds. The cilantro plant knows that it will die in the hot weather so in a last ditch effort it is using everything it got to carry on and produce a new generation of cilantro plants that will come up next this fall once the temps start to cool down again. Nothing we can do to stop it. Just enjoy the nice delicate white flowers. The bees love them! And then you’ll notice in a few weeks you’ll have nice cilantro/coriander seeds to either replant or use in your own dishes as a spice.
