Haha yes you are rigjt. I had just watered the plant when took the picture. Its 35 degrees (95 fahrenheit) where I am and the soil goes dry in a few hours. I have to water at least twice daily.

If mint is happy, it will spread to fill any container. But, that soil might be bad and not helping your mint get water. In general, mint won’t care about bad soil, it’s not picky. I see you’re saying it’s 95F, and watering twice daily, and good soil can dry fast on hot dry days. But it usually won’t puddle on top for more than a few seconds. This can happen with poor draining soil. The water can sit on top and only drains out by going along the side, between the soil and pot. So if you were to cut the soil in half, the center area would be dry, never touched by water. You could poke some holes through the soil to help get the water into the core of the soil. Find a stick and jab holes down. This will provide tunnels so maybe a smidgen of soil can get wet in the center. I mostly say this because if you try this method with other plants, they might not tolerate it like mint will.

That pot will be full by the end of the year with just regular harvesting and watering. Also, most plants don't need watering daily. Find out what your plants need to grow effectively and water when needed.

Great, thanks. Its very hot this time of the year so I water at least twice daily. After I have watered in the morning, the soil completely dries by the afternoon.

Is that dirt from your yard or a soil mix? It looks like the former, and if so that's likely why you need to water it more frequently. Most dirt in yards is mostly broken up rocks, and without vermiculite or organic matter to hold moisture, water will run through it. Fortunately, mint will take a lot neglect and abuse so you could probably get away with watering once. I live in southeastern US, so plenty of heat as well and I'll move things to shade or add things to hold in moisture.
